Du kannst es erstmal weglassen und zufügen, wenn du was passendes hast.
Und Kimchi wird ja nicht nur roh aus dem Pott gegessen, sondern damit wird auch gekocht und somit nachgewürzt.
Von daher - egal.
Soweit ich weiß, gibt es eh keine fixen Rezepte, sondern jedes Kimchi ist anders (aber immer höllenscharf ), von daher ist meins wohl immer eine für Koreaner fade Pampe....

angeblich ist das flott fertig, von 24 std bis 2-3 tage hab ich da gelesen. ein gläschen sardellenfilets in knoblauch hätt ich grad gefunden, das müsste ja was in richtung anchovis sein

Das tät schon passen, aber ich würd sie doch etwas wässern - Salz ist ja schon genug drin.
Den Fischgeschmack bringen sie aber bestimmt.
Und Kimchi ist immer flott fertig, weil Chinakohl doch zarter ist als europäischer Weißkohl.
